Get ahead meal plan…

So the summer holidays are over, a new school year is starting. Which means us as parents are trying to get organised……again!!!

With uniforms to wash, bags to pack and trying to keep on top of, well life….work, home and appointments the last thing you want is to start panicking over what to have for breakfast, dinner or tea (lunch and dinner if you aren’t northern!!). So with that in mind I have put together a meal plan to share with you with some make ahead / reheat / easy meals! I’ve worked my meal plan this week to incorporate two after school clubs – Wednesday and Friday.

Day 1

Breakfast – french toast

Dinner – wrap pizza

Tea – chicken pesto tray bake (using thighs, red onions, peppers and new potatoes)

Day 2

Breakfast – pancakes

Dinner –welsh rarebit

Tea – sausage tray bake

Day 3

Breakfast – overnight slow cooker porridge (BBC have a good recipe)

Dinner – chicken wrap

Tea – one pan creamy pesto penne (v)

Day 4

Breakfast – porridge

Dinner – sandwich

Tea – £10 Tesco meal deal for our wedding anniversary

Day 5

Breakfast – toast

Dinner – soup

Tea – mild / cheesy enchiladas

Day 6

Breakfast – porridge

Dinner – soup

Tea – spaghetti and meatballs

Day 7

Breakfast – breakfast wrap

Dinner – soup

Tea – meatball sub and wedges (leftover meatballs)

So I have tried to do extra one night and make a second meal of it, make a batch of soup for lunches so I can rest as much as possible. I’ve also incorporated one pan / tray meals and the enchiladas I can make ahead and then either set the oven to come on or reheat at tea time.

Hopefully this weeks meal plan will give me chance to have a slightly easier back to school week with meal times!!!!

P.S I start my meal plan on a Saturday. So day one for us is Saturday.
