Well hello there!! It’s been so long since I have written but honestly I haven’t had much to say really.
As things are getting more and more back to normal, I really want to start blogging more again. So here I am!!!
I am starting off easy though and starting with a meal plan. If you have been following my blogs for a while then you will have read a few of my meal plans and recipe posts. This time though rather than do the week ahead I will do a week review of meals.
So here’s my first week review meal plan of 2021.
Greek night. I don’t know about you but we love fakeaway nights in our house. Yes it can be hard work depending on what region of dishes you are making but it is healthier. I also find that my youngest eats so much better this way as well as he is in control of how much and what goes on his plate. Greek nights are actually one of the easiest ones to do as well. I also made a 3 ingredient dessert too!!! Geek yogurt, honey and crushed pistachio nuts.
Chicken casserole, this was really tasty and great for making ahead too!!
Controversial but we actually had a ploughman’s for tea. Two reasons, it involves zero cooking from me!!! The second reason because it’s actually the one thing I can put in front of my son that I know he will eat it all!!!! So if you are stuck in a food rut I recommend it! Mix together various crackers, part baked bread, fruit and veg sticks and various cheeses! Perfect. Especially on a warm day.
Cheeky midweek roast!!! So easy and super tasty. Today we had cheesy stuffed chicken wrapped in parma ham with roasties. Now I was meant to cook some veg as well but to be perfectly honest I was not up to eating them.
Bolognese pasta bake. This was a perfect make ahead dish and freeze and leftovers! We have after school clubs twice a week and this was perfect for one of these nights.
Ok so tonight was meant to be pesto chicken with green bean salad. However, my FND has flared up a lot at the moment and I felt so so so ill this day that I ended up having poached eggs on toast for tea!!!
Tonight’s tea felt like such an amazing treat! We had a calamari salad. Ste made it and honestly it was so so good! He added various spices to the flour / cornflour mixture and cooked it in a pan of oil and served with salad. I seriously cannot wait to have this again it was that good!!!
